This light, sweet and crunchy salad works fantastic as an appetizer, side salad, or as a main course (served with a protein of your choice). The salad dressing, made with fresh lemon and lime juice, a dash of garlic salt, honey, and a tad of extra virgin olive oil, provides a slight tang when mixed with the sweet fruit. Citrus Salad

Ingredients
  • quinoa (cooked to package instructions, ½ c. per person per serving)
  • 2 c. butter lettuce (or 1 c. per person)
  • red onion, diced
  • candied walnuts
  • fresh dill sprigs
  • fresh strawberries, sliced
  • Mandarin orange slices
  • 1 T. fresh lemon juice
  • 1 T. fresh lime juice
  • dash garlic salt
  • extra virgin olive oil
  • 1 T. honey
Instructions
  1. Mix the above ingredients in a large salad bowl.
  2. Plate ½ c. quinoa.
  3. Add salad mix on top of quinoa.
  4. Garnish the salad with extra strawberries, Mandarin orange slices, and dill sprigs.
Notes
Serve the salad as is, for an appetizer, or with grilled fish or other protein.
