Banana Ice

Serves: 4
  • 4 large bananas, frozen with skins off
  • 1 c. coconut milk
  • 5 T. dark chocolate, shredded
  • walnut pieces
  • Whip cream (optional)
  1. In a quality juicer or blender, add two frozen bananas and ½ c. coconut milk.
  2. Blend.
  3. Add in 2 more frozen bananas and the rest of the coconut milk.
  4. Blend. (If the mixture is hard to blend, add in a little bit more coconut milk. The mixture will be like a very heavy smoothie).
  5. Top each dish with a bit of shredded dark chocolate (use a grater to shred a dark chocolate bar with at least 70% higher of cocoa) and walnut pieces.
You can freeze mixture in a Tupperware dish in the freezer. When you want to serve it again, just thaw out the banana ice a bit so you can scoop it out of the container.
