Ingredients
  • 2 Swai fillets (or other mild white fish fillets such as Tilapia)
  • 1 ½ c. diced pineapple in their juice
  • 1 ½ T. Dijon mustard
  • garlic salt and pepper
  • red chili pepper flakes
  • 2-½ T. coconut oil
Instructions
  1. On the stovetop in a skillet over low heat, add in coconut oil to coat the bottom of the pan, and then add in the fillets.
  2. Sprinkle garlic salt and pepper over the fillets.
  3. Let the fillets cook for several minutes, then turn them over.
  4. Add in pineapple juice and Dijon and mix well.
  5. Add in pineapple chunks and stir.
  6. Sprinkle red chili pepper flakes over the fillets.
  7. Let the fillets cook for a few more minutes until done.
