Lentils with Garlic, Onion & Sun-dried Tomato

Ingredients
  • 1 c. green lentils cooked to package instructions
  • ½ white onion, peeled and diced
  • 4 garlic cloves, peeled and diced
  • ¼ c. diced green or red pepper
  • ½ c. diced sun-dried tomatoes in extra virgin olive oil
  • ⅓ c. fresh basil, chopped
  • dash garlic salt
  • dash ground oregano
  • dash red chili pepper flakes
  • freshly squeezed juice from 1 small lemon or lime
  • extra virgin olive oil
  • Maryann’s Middle Eastern Hummus Recipe (if serving with hummus and pita)*
  • dash of smoked paprika (if serving with hummus)
Instructions
  1. Cook lentils to package instructions and set aside
  2. Drizzle extra virgin olive oil into a skillet on the stovetop over low heat
  3. Sauté onion and garlic until slightly golden
  4. Add in sun-dried tomatoes
  5. Add in basil
  6. Add in lemon or limejuice
  7. Add in salt, oregano, red chili pepper flakes, and garlic powder to taste
