Peanut Butter Chicken

- 4-5 chicken breasts (boneless and skinless), cut into 1 inch by 1 inch squares
- 3 T. garlic olive oil (or extra virgin olive oil)
- 1 T. sesame oil
- ¾ c. chicken broth
- ½ c. chunky peanut butter
- ½ c. peanuts
- ¼ c. honey
- garlic salt and pepper to taste (Note: use garlic salt vs. regular salt if you don’t have garlic olive oil)
- 4 scallions, chopped
- In a skillet on the stovetop over medium heat, put oils (olive and sesame) in the pan.
- Put chicken, peanuts and some of the chicken broth in the skillet and cook mixture over medium heat until very lightly browned.
- Add in chicken broth and chunky peanut butter. Stir well.
- Add in honey. Stir.
- Add in scallions and garlic salt and pepper to taste.
- Cook mixture on low heat for approximately 20 minutes.
- Serve Peanut Butter Chicken with brown or white rice or over noodles.
- Serve immediately!
