Chili Lime Cauliflower Rice

Ingredients

red onion, diced

fresh spinach

c.
carrots, shredded
1/2
c.
water
1/4
c.
walnuts, chopped
1/4
c.
pistachios

16oz.
cauliflower rice (in a bag or frozen)
1/2
c.
golden raisins

T.
freshly squeezed lime juice
Worcestershire sauce, few sprinkles to taste
soy sauce, few sprinkles to taste (optional)

chili lime seasoning blend to taste

garlic powder

garlic salt to taste (optional)
extra virgin olive oil
Instructions
At the stovetop, drizzle some olive oil in a skillet.
Add in red onion and sauté until translucent.
Add in spinach, carrots, and water. Stir veggies untiltender.
Add in walnuts and pistachios, stir.
Add in cauliflower rice, lime juice, and spices and saucesto taste.
Notes
Serve by itself (or with your favorite protein). Refrigerate leftovers for additional meals.
