Chili Lime Cauliflower Rice


  • 1/2 c. red onion, diced
  • 2 c. fresh spinach
  • 1/2 c. carrots, shredded
  • 1/2 c. water
  • 1/4 c. walnuts, chopped
  • 1/4 c. pistachios
  • 1 16oz. cauliflower rice (in a bag or frozen)
  • 1/2 c. golden raisins
  • 2 T. freshly squeezed lime juice
  • Worcestershire sauce, few sprinkles to taste
  • soy sauce, few sprinkles to taste (optional)
  • 2-3 T. chili lime seasoning blend to taste
  • 1 tsp. garlic powder
  • 1/4 tsp. garlic salt to taste (optional)
  • extra virgin olive oil


  • At the stovetop, drizzle some olive oil in a skillet.
  • Add in red onion and sauté until translucent.
  • Add in spinach, carrots, and water. Stir veggies untiltender.
  • Add in walnuts and pistachios, stir.
  • Add in cauliflower rice, lime juice, and spices and saucesto taste.


Serve by itself (or with your favorite protein). Refrigerate leftovers for additional meals.
