Sweet & Spicy Black Bean Tacos

Ingredients

can
black beans, drained
2
sweet potatoes, boiled and cubed

c.
pineapple chunks (fresh or if in a can, drained)
1/4
c.
red onion, diced
1
avocado, peeled and cubed
chili lime pepper (few dashes to taste)
Chipotle seasoning (few dashes to taste)

T.
freshly squeezed lemon juice
4
tortilla shells (soft or crisp)
1/4
c.
Feta Cheese (Vegan or Regular or other cheese)

c.
shredded lettuce
Instructions
Mix black beans, potatoes, pineapple, onion, avocado, seasonings to taste, and lemon juice in a large bowl.
Warm tortilla shells.
To Plate
Down the center of each tortilla shell, place a generous portion of the mix.
Add cheese.
Add shredded lettuce.
Notes
Depending upon how big your tortilla shells are, this recipe can serve either 4-6 people. Enjoy any leftovers for another meal!
