Ingredients
Method
- Preheat oven to 350 Degrees F
- Grease Pyrex dish with coconut oil
- Add apples to a large bowl
- Add in lemon juice and toss apples in the juice
- Add in cranberry sauce and mix ingredients
- Add in blueberries, lemon extract, and spices and mix
- Pour apple and berry mixture into Pyrex dish and set aside
Topping
- In another large bowl, add in oatmeal and spices
- Add in coconut oil (oil should be solid), and with two sharp knives, cut mixture until small pea size balls form
- Mix in candied pecan pieces and coconut flakes
- Spread oat topping over the apple and berry dish
- Bake dish in the oven for 40-50 minutes until golden brown and bubbly
- Serve hot or cold
Notes
Note: If your coconut oil is liquid, place 3 T. of oil in a dish in the fridge for five minutes for oil to become solid. Serve the dish hot or cold. Apple & Berry Crisp is also delicious with vanilla bean ice cream or whipped cream (vegan or regular). ©MaryannRidiniSpencer.com/SimplyDeliciousLiving
