Avocado Toast with Greens & Balsamic Glaze

Equipment

  • 1 Panini Press Grill

Ingredients
  

  • sourdough bread
  • olive oil spray
  • 1 avocado, peeled and scooped
  • 1/4 c. pistachios, shelled
  • 1/2 c. black or Kalamata olives, sliced
  • 1 Roma tomato, diced
  • 1/2 c. mixed greens (various lettuces)
  • 1/4 c. arugula
  • 3 leaves fresh basil, chopped
  • Za'atar (Middle Eastern Blend)
  • balsamic vinegar (high quality and thick)

Instructions
 

  • Heat panini grill (on stovetop or plug in)
  • Spray sourdough bread on both sides and place on grill for several minutes until either side is done
  • Remove bread from grill and plate
  • Spread a layer of avocado over bread
  • Sprinkle pistachio meat over bread followed by olives and tomatoes
  • Add mixed greens, arugula and fresh basil over toast
  • Sprinkle Za'atar seasoning over bread
  • Drizzle balsamic over bread

Notes

This recipe serves 1-2 people. For more, just double or triple the ingredients.
Serve Avocado Toast with Greens and Balsamic Glaze for breakfast or lunch. You can also make Avocado Toast with Sweet Potato, Goat Cheese, Pesto, Hummus and Tomato, Eggs and Cheese, or any other combination of ingredients to your liking!
