Lemon Artichoke and Nut Pasta

Ingredients
  

  • corkscrew pasta for four cooked to package instructions
  • 1 can artichoke hearts (in water)
  • 1/4 c. basil, chopped
  • 1 tsp. garlic powder
  • 1/4 tsp. garlic salt
  • 1 T. Italian seasoning
  • 1 lemon (zest and juice)
  • 1/4 c. walnut pieces
  • 1/4 c. pistachios
  • 1/2 c. Parmesan Romano cheese
  • 1/4 c. Pecorino cheese

Method
 

  1. Cook and drain pasta and add to a large bowl*
  2. Drain one can of artichoke hearts. Break hearts apart and add them to the pasta
  3. Add garlic powder, salt, and Italian seasoning to taste
  4. Squeeze the juice of one lemon into the bowl
  5. Add in lemon zest
  6. Add in cheeses, pistachios,and walnuts
  7. Mix well
  8. Serve hot or cold.

Notes

Notes: Add in seasonings and extra virgin olive oil to taste (optional). Serve hot or cold.
*I like to add all the ingredients in to pasta I've just taken off the stove. It makes all the ingredients blend perfectly for that simply delicious bite!
