Ingredients
- 4 boneless chicken breasts
- 2½ c. of whole cranberries**
- 2 apples, peeled and diced
- 4 medium sized potatoes
- ⅔ c. and 2 T. of Ojai Valley Food Company Orange Honey (or other honey)
- 4-5 T. of fresh rosemary leaves
- 1 c. orange juice
- extra virgin olive oil
- Garlic Salt and Pepper to taste
Instructions
- Peel and cut potatoes in wedges.
- In a pot on the stovetop parboil potatoes for a 2-3 minutes to soften them a bit (they will be still firm). Then set aside.
- Pour ⅔ cup of orange honey and orange juice in a bowl, mix together.
- Dredge each piece of chicken in the mixture covering all sides of the chicken.
- Place each piece of chicken on baking sheet covered with tin foil.
- Gently mix cranberries and apples in a bowl.
- Pour cranberries and apples over the chicken.
- Put parboiled potatoes on the baking sheet next to the chicken.
- Put fresh rosemary all over the potatoes and chicken, apples and cranberries
- Put the 2 tablespoons of honey over the chicken, apples and cranberries.
- Sprinkle garlic salt and pepper lightly over chicken, apples, cranberries and potatoes.
- Drizzle a little olive oil over potatoes and gently toss into potatoes.
- Cook for approximately 50 minutes approximately until chicken and the potatoes are a golden brown.
**If you can’t find fresh cranberries, use frozen. If you can’t find frozen, substitute whole berry cranberry sauce (1 1/2 cups). (Note: Fresh cranberries are the best).
