Pumpkin, Applesauce & Coconut Muffins

Ingredients
  

  • 2 c. organic all-purpose flour
  • 2 eggs
  • 1 can organic pumpkin puree
  • 3/4 c. unsweetened applesauce
  • 1.5 tsp. lemon extract
  • 1.5 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 1/4 tsp. ginger
  • 1/4 tsp. salt
  • 2 T. stevia
  • 1/4 c. coconut flakes
  • 1 c. frozen pineapple pieces (heaping cup)

Method
 

  1. Preheat oven to 350 Degrees F
  2. Grease a muffin tin with coconut oil.
  3. Add all ingredients into a large bowl and mix with a spatula or large mixing spoon (not an electric mixer)
  4. Spoon mixture into muffin tins, making sure each muffin gets pieces of pineapple
  5. Bake muffins for 40-50 minutes. Insert a toothpick into muffins; if it comes out moist but not gooey, muffins are done.
  6. Let muffins cool in the muffin tin before extracting.
  7. Serve muffins when cooled. You can also refrigerate or freeze muffins.
