Pumpkin, Applesauce & Coconut Muffins
Inspired by my love of the Hawaiian Islands, the backdrop to my Kate Grace novel series, Pumpkin, Applesauce & Coconut Muffins are simply delicious, moist, and flavorful. They are definitely something that my character Kate Grace would find at one of her favorite places – The Plumeria Café.

Ingredients
Method
- Preheat oven to 350 Degrees F
- Grease a muffin tin with coconut oil.
- Add all ingredients into a large bowl and mix with a spatula or large mixing spoon (not an electric mixer)
- Spoon mixture into muffin tins, making sure each muffin gets pieces of pineapple
- Bake muffins for 40-50 minutes. Insert a toothpick into muffins; if it comes out moist but not gooey, muffins are done.
- Let muffins cool in the muffin tin before extracting.
- Serve muffins when cooled. You can also refrigerate or freeze muffins.
