Wacky Cake

My sister Kathy and I always loved to help my Mom prepare meals for family dinners and whenever my parents entertained.  My Mom was also known for never buying store-bought desserts. She always made her cakes and cookies from scratch—whether her creations or recipes from the latest women’s magazines. Growing up, one of our favorite desserts was a simply delectable, moist chocolate treat called Wacky Cake. I’m unsure where my Mom found this recipe, but it is simply delicious. Let’s make it!

Ingredients
  

  • 1 1/2 c. flour
  • 1 c. sugar or a natural sweetener like xylitol
  • 1/4 c. cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 T. white balsamic vinegar, white vinegar, or white wine vinegar
  • 1 tsp. vanilla extract
  • 1 c. cold water (1 to 1 1/4 c. until smooth but thick
  • 1/3 c. extra virgin olive oil
Cake Topping
  • fresh strawberries, sliced thin
  • Whipped cream (regular or Vegan)

Method
 

  1. Preheat the oven to 350 degrees F
  2. Grease and flour a 9" square Pyrex dish or pan
  3. Add all ingredients into a bowl and mix
  4. Pour the mixed batter into a greased Pyrex dish or pan
  5. Bake the cake for 40-45 minutes approximately. (Test with a toothpick to check if it is done. The inside will be slightly moist.)
  6. Let the cake cool to room temperature before removing it from the pan
  7. Top the cake with sliced strawberries*
  8. Serve the cake with whipped cream

Notes

Note: To serve, you can top the entire cake with strawberries or slice the cake, place strawberries on each serving, and top with a dollop of whipped cream. It is best to store extra in the fridge without the strawberries on top.
