Vegan Nachos

I love making my Vegan Nachos for a yummy appetizer to share at gatherings with friends and family. They are so easy to make and packed full of nutritious ingredients!

Vegan Nachos

Ingredients
  

  • 1 can garbanzo beans, drained
  • 1 can black beans, drained
  • 2 Roma tomatoes, diced
  • 1/4 c. red onion, diced
  • 1/3 c. black olives, sliced
  • 1/2 c. peaches, diced
  • a avocado, peeled and diced
  • 1 T. your favorite taco seasoning mix
  • 1 T. garlic powder
  • 4 T. freshly squeezed lemon juice
  • 1 c. Vegan cheddar cheese, shredded
  • 1 1/2 c. arugula leaves
  • 5 c. Blue corn chips
  • extra virgin olive oil spray

Instructions
 

  • Preheat oven to 350 Degrees F
  • Add beans, tomatoes, onion, olives, peaches, avocado, seasonings,and lemon juice in a large bowl and mix.
  • Grease a Pyrex dish with oil spray
  • Layer Pyrex dish bottom with corn chips
  • Place arugula leaves over chips
  • Sprinkle cheese over chips and arugula
  • Pour a generous helping of the bean mix over the chips
  • Add more arugula
  • Add another layer of chips
  • Add another layer of the bean mix
  • Top dish with a generous portion of cheese
