Vegan Nachos
I love making my Vegan Nachos for a yummy appetizer to share at gatherings with friends and family. They are so easy to make and packed full of nutritious ingredients!
Vegan Nachos
Ingredients
- 1 can garbanzo beans, drained
- 1 can black beans, drained
- 2 Roma tomatoes, diced
- 1/4 c. red onion, diced
- 1/3 c. black olives, sliced
- 1/2 c. peaches, diced
- a avocado, peeled and diced
- 1 T. your favorite taco seasoning mix
- 1 T. garlic powder
- 4 T. freshly squeezed lemon juice
- 1 c. Vegan cheddar cheese, shredded
- 1 1/2 c. arugula leaves
- 5 c. Blue corn chips
- extra virgin olive oil spray
Instructions
- Preheat oven to 350 Degrees F
- Add beans, tomatoes, onion, olives, peaches, avocado, seasonings,and lemon juice in a large bowl and mix.
- Grease a Pyrex dish with oil spray
- Layer Pyrex dish bottom with corn chips
- Place arugula leaves over chips
- Sprinkle cheese over chips and arugula
- Pour a generous helping of the bean mix over the chips
- Add more arugula
- Add another layer of chips
- Add another layer of the bean mix
- Top dish with a generous portion of cheese
