Vegan Nachos

I love making my Vegan Nachos for a yummy appetizer to share at gatherings with friends and family. They are so easy to make and packed full of nutritious ingredients!

Vegan Nachos

Ingredients
  

  • 1 can garbanzo beans, drained
  • 1 can black beans, drained
  • 2 Roma tomatoes, diced
  • 1/4 c. red onion, diced
  • 1/3 c. black olives, sliced
  • 1/2 c. peaches, diced
  • a avocado, peeled and diced
  • 1 T. your favorite taco seasoning mix
  • 1 T. garlic powder
  • 4 T. freshly squeezed lemon juice
  • 1 c. Vegan cheddar cheese, shredded
  • 1 1/2 c. arugula leaves
  • 5 c. Blue corn chips
  • extra virgin olive oil spray

Method
 

  1. Preheat oven to 350 Degrees F
  2. Add beans, tomatoes, onion, olives, peaches, avocado, seasonings,and lemon juice in a large bowl and mix.
  3. Grease a Pyrex dish with oil spray
  4. Layer Pyrex dish bottom with corn chips
  5. Place arugula leaves over chips
  6. Sprinkle cheese over chips and arugula
  7. Pour a generous helping of the bean mix over the chips
  8. Add more arugula
  9. Add another layer of chips
  10. Add another layer of the bean mix
  11. Top dish with a generous portion of cheese
