Lentils with Garlic, Onion & Sun-dried Tomato
My Lentils with Garlic, Onion & Sun-dried Tomato recipe is delicious and versatile! The lentils taste great in a pita sandwich or in a hummus wrap. I also love to serve it over grilled or baked cod or halibut, and/or toss the lentils in a bowl of fusilli pasta.
Lentils with Garlic, Onion & Sun-dried Tomato

Ingredients
- 1 c. green lentils cooked to package instructions
- ½ white onion, peeled and diced
- 4 garlic cloves, peeled and diced
- ¼ c. diced green or red pepper
- ½ c. diced sun-dried tomatoes in extra virgin olive oil
- ⅓ c. fresh basil, chopped
- dash garlic salt
- dash ground oregano
- dash red chili pepper flakes
- freshly squeezed juice from 1 small lemon or lime
- extra virgin olive oil
- Maryann’s Middle Eastern Hummus Recipe (if serving with hummus and pita)*
- dash of smoked paprika (if serving with hummus)
Instructions
- Cook lentils to package instructions and set aside
- Drizzle extra virgin olive oil into a skillet on the stovetop over low heat
- Sauté onion and garlic until slightly golden
- Add in sun-dried tomatoes
- Add in basil
- Add in lemon or limejuice
- Add in salt, oregano, red chili pepper flakes, and garlic powder to taste
