Apple & Berry Crisp

Apple & Berry Crisp

Ingredients
  

Filling
  • 4 apples (peeled and sliced)
  • 3 T. freshly squeezed lemon juice
  • 1 can whole berry cranberry sauce
  • 2 c. blueberries (fresh or frozen)
  • 1 tsp. lemon extract
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • 1/2 c. unsweetened apple sauce
Topping
  • 1 c. quick oats
  • 3 T. coconut oil (solid)
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1/2 c. candied pecans, chopped
  • 1/2 c. coconut flakes
  • 1 T. coconut oil (to grease Pyrex dish)

Method
 

  1. Preheat oven to 350 Degrees F
  2. Grease Pyrex dish with coconut oil
  3. Add apples to a large bowl
  4. Add in lemon juice and toss apples in the juice
  5. Add in cranberry sauce and mix ingredients
  6. Add in blueberries, lemon extract, and spices and mix
  7. Pour apple and berry mixture into Pyrex dish and set aside
Topping
  1. In another large bowl, add in oatmeal and spices
  2. Add in coconut oil (oil should be solid), and with two sharp knives, cut mixture until small pea size balls form
  3. Mix in candied pecan pieces and coconut flakes
  4. Spread oat topping over the apple and berry dish
  5. Bake dish in the oven for 40-50 minutes until golden brown and bubbly
  6. Serve hot or cold

Notes

Note: If your coconut oil is liquid, place 3 T. of oil in a dish in the fridge for five minutes for oil to become solid. Serve the dish hot or cold. Apple & Berry Crisp is also delicious with vanilla bean ice cream or whipped cream (vegan or regular).
