
Curried Lentils with Peppers & Onions
Lentils are packed with plant-based protein (18 grams per 1 cup of cooked lentils) as well as a host of healthy vitamins and nutrients. “Curried Lentils with Peppers & Onions” is my favorite go-to recipe that I enjoy in a variety of ways — as a meal, side, or snack. Ingredients
Method
- Cook package of lentils to package instructions.
- While lentils are cooking, in a skillet on the stove top saute pepper and onion mix (with a bit of olive oil or water in the pan)
- When lentils are cooked, put in a large bowl.
- Add in cooked pepper and onion mixture.
- Add in spices. Mix.
- Add in Worcestershire. Mix.
- Taste test and add in more spice (or not) to your liking.
- Garnish dish with smoked paprika. Serve immediately or refrigerate for later use.
