Curried Lentils with Peppers & Onions

Lentils are packed with plant-based protein (18 grams per 1 cup of cooked lentils) as well as a host of healthy vitamins and nutrients. “Curried Lentils with Peppers & Onions” is my favorite go-to recipe that I enjoy in a variety of ways — as a meal, side, or snack. Curried Lentils with Peppers & Onions


  • 16 ounces lentils cooked to package instructions
  • 2 c. fire roasted red pepper & onion blend (frozen or fresh)
  • 2 T. red curry powder
  • 1/2 tsp. garam masala
  • 1/4 tsp. chipotle powder
  • 1/2 tsp. red chili pepper flakes
  • 1 tsp. garlic powder
  • 1 T. Italian seasoning blend
  • 1 T. Worcestershire sauce
  • smoked paprika (garnish for top)
  • extra virgin olive oil or water


  • Cook package of lentils to package instructions.
  • While lentils are cooking, in a skillet on the stove top saute pepper and onion mix (with a bit of olive oil or water in the pan)
  • When lentils are cooked, put in a large bowl.
  • Add in cooked pepper and onion mixture.
  • Add in spices. Mix.
  • Add in Worcestershire. Mix.
  • Taste test and add in more spice (or not) to your liking.
  • Garnish dish with smoked paprika. Serve immediately or refrigerate for later use.
