Simple Rice Pudding
One night at my sister’s house, she made rice in a bag as a side for dinner to enjoy with the main course (grilled salmon). The rice only took 10 minutes to make on the stovetop, which was delicious! I loved the texture of the rice—light and fluffy and felt it would be so easy to make a simple rice pudding, and it was! My Simple Rice Pudding recipe makes a great dessert or snack. The best part is that there’s NO REFINED SUGAR, only fresh fruit (bananas) and dried fruit. Enjoy!
Simple Rice Pudding
Ingredients
- 3 c. white rice
- 2 ripe bananas, mashed
- 1/2 c. dried fruit (raisins or blend of other dried fruits)
- 1-2 tsp. almond or lemon extract (to taste)
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 3/4 c. shredded coconut (1/2 c. for rice mix, 1/4 c. for topping)
- 1/4 c. almond or coconut milk
- 1 tsp. coconut oil
Instructions
- Preheat oven to 350 Degrees
- 3-3.5 c. cooked rice
- Add in 2 mashed bananas to rice mixture
- Add in dried fruit, extract (to taste), spices, coconut flakes and mix
- Add in milk
- grease a Pyrex dish with coconut oil
- Pour rice mixture into Pyrex dish
- Top rice pudding with coconut flakes
- Bake in the oven at 350 Degrees for half hour.
- Place in the fridge for a few hours or overnight
