Simply Fajitas

Ingredients
  

  • 4 Ezekiel Sprouted Whole Grain Tortillas
  • 1 onion, small
  • 1 yellow pepper, diced or sliced
  • 1 red pepper, diced or sliced
  • 1/4 c. water
  • 1/2 tsp. Mexican seasoning blend
  • 2 Roma tomatoes, diced
  • 1/2 c. black beans, drained
  • 1 1/2 c. jumbo-cooked shrimp, chicken, beef, or tofu (optional)
  • 1/2 c. arugula
  • 1 avocado (peeled and scooped)
  • 1/2 c. cheese (Dairy or Vegan)
  • 1/4 c. fresh lime juice

Instructions
 

  • Drizzle olive oil in a skillet on the stovetop over low heat
  • Add in peppers and onion
  • Add in water and sauté
  • Add in Mexican seasoning (to taste) blend and mix.
  • Warm tortilla shells

To Plate

  • Place a tortilla shell on a plate (s)
  • Place a few tablespoons of the pepper and onion mix in the middle of the tortilla
  • Add Roma tomatoes
  • Add black beans
  • Add shrimp, chicken, beef, or tofu (optional)
  • Add arugula
  • Add avocado
  • Add more Mexican seasoning blend
  • Add cheese (Vegan or regular)
  • squeeze lime juice on top

Notes

Serve this recipe with chicken, meat, fish, or Vegan or Vegetarian (with tofu or cheese). If you like, also serve with your favorite salsa.
This recipe serves 2-3, but you can add more ingredients depending upon appetites and the number of guests you’re serving.
