Fruit & Nut Oat Cake
I love to enjoy something chewy and cakey for breakfast or an afternoon snack with tea. My FRUIT & NUT OAT CAKE, made with all-natural ingredients minus processed sugar, delivers on taste and texture.
Fruit & Nut Oat Cake
Ingredients
- 1 c. flour
- 2 c. quick oats
- 1 c. unsweetened apple sauce
- 1 1/2 tsp. baking powder
- 1 tsp. pumpkin pie spice
- 1/2 tsp. cinnamon
- 1 tsp. lemon or vanilla extract
- 2 eggs
- 1/3 c. walnut pieces
- 1 c. blueberries (fresh or frozen)
- 1 tsp. flour and coconut oil for pan greasing
Instructions
- Preheat oven to 350 Degrees F.
- Grease and four Pyrex dish or pan and set aside.
- In a large bowl add in flour and oats and mix.
- Add in apple sauce, baking powder, spices, and extract and mix.
- Add in two eggs and mix.
- Add in walnuts and mix.
- Add in blueberries and mix.
- Bake the cake for 50-60 minutes—test readiness with a knife. If the knife comes out clean, the cake is ready to remove from the oven. Let the cake cool before cutting.
