Fruit & Nut Oat Cake

I love to enjoy something chewy and cakey for breakfast or an afternoon snack with tea. My FRUIT & NUT OAT CAKE, made with all-natural ingredients minus processed sugar, delivers on taste and texture.

Fruit & Nut Oat Cake

Ingredients
  

  • 1 c. flour
  • 2 c. quick oats
  • 1 c. unsweetened apple sauce
  • 1 1/2 tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 tsp. lemon or vanilla extract
  • 2 eggs
  • 1/3 c. walnut pieces
  • 1 c. blueberries (fresh or frozen)
  • 1 tsp. flour and coconut oil for pan greasing

Method
 

  1. Preheat oven to 350 Degrees F.
  2. Grease and four Pyrex dish or pan and set aside.
  3. In a large bowl add in flour and oats and mix.
  4. Add in apple sauce, baking powder, spices, and extract and mix.
  5. Add in two eggs and mix.
  6. Add in walnuts and mix.
  7. Add in blueberries and mix.
  8. Bake the cake for 50-60 minutes—test readiness with a knife. If the knife comes out clean, the cake is ready to remove from the oven. Let the cake cool before cutting.
