Fruit & Nut Oat Cake

I love to enjoy something chewy and cakey for breakfast or an afternoon snack with tea. My FRUIT & NUT OAT CAKE, made with all-natural ingredients minus processed sugar, delivers on taste and texture.

Fruit & Nut Oat Cake


  • 1 c. flour
  • 2 c. quick oats
  • 1 c. unsweetened apple sauce
  • 1 1/2 tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 tsp. lemon or vanilla extract
  • 2 eggs
  • 1/3 c. walnut pieces
  • 1 c. blueberries (fresh or frozen)
  • 1 tsp. flour and coconut oil for pan greasing


  • Preheat oven to 350 Degrees F.
  • Grease and four Pyrex dish or pan and set aside.
  • In a large bowl add in flour and oats and mix.
  • Add in apple sauce, baking powder, spices, and extract and mix.
  • Add in two eggs and mix.
  • Add in walnuts and mix.
  • Add in blueberries and mix.
  • Bake the cake for 50-60 minutes—test readiness with a knife. If the knife comes out clean, the cake is ready to remove from the oven. Let the cake cool before cutting.
