Mediterranean Flatbread Pizza
I love pizza! Who doesn’t? Normally, I enjoy a Margherita Pizza or a Flatbread pizza made with simple, healthy ingredients such as tomatoes, mozzarella, and fresh basil. Recently, for a change of pace, I decided to mix things up a bit and add some other Mediterranean flavors — olives, feta, and other yummy ingredients! The result was simply delicious! This recipe is for one flatbread. For additional, just double the recipe and so on! Enjoy!

Ingredients
Method
- Lightly coat a skillet on the stove with olive oil over low heat.
- Add the pepper and onion mixture and sauté until tender and slightly golden.
- Toast a piece of naan bread.
- Spread hummus over bread (see below for link to hummus recipe).
- Add the onion and pepper saute over the bread.
- Add tomatoes, mushrooms, olives, spinach, and basil leaves.
- Top the bread with feta crumbles.
- Sprinkle with garlic salt and pepper to taste.
Notes
This recipe is for an individual flatbread pizza.
