Mediterranean Flatbread Pizza

Mediterranean Flatbread Pizza

Ingredients
  

  • 1 naan bread (garlic or plain), or toasted pita, or an individual toasted pizza crust
  • 1 c. red, green, and yellow bell pepper and onion mix (frozen or fresh)
  • 1/4 c. hummus*
  • 1 Roma tomato (diced)
  • 1/2 portobello mushroom (chopped)
  • 2-3 T. Kalamata olives (sliced)
  • 6 leaves fresh spinach, chopped
  • 2 leaves fresh basil, chopped
  • 2 T. feta cheese (crumbled)
  • garlic salt (to taste)
  • pepper (to taste)
  • extra virgin olive oil

Method
 

  1. Lightly coat a skillet on the stove with olive oil over low heat.
  2. Add the pepper and onion mixture and sauté until tender and slightly golden.
  3. Toast a piece of naan bread.
  4. Spread hummus over bread (see below for link to hummus recipe).
  5. Add the onion and pepper saute over the bread.
  6. Add tomatoes, mushrooms, olives, spinach, and basil leaves.
  7. Top the bread with feta crumbles.
  8. Sprinkle with garlic salt and pepper to taste.

Notes

This recipe is for an individual flatbread pizza. Double the recipe for two and so on.
