Roasted Butternut Squash & Apple Spice
For a delish meatless meal or paired with your favorite meat or fish protein, my Roasted Butternut Squash & Apple Spice is an easy-to-make, healthy holiday dish! For Vegans enjoy without the cheese (or with a Vegan alternative).
Roasted Butternut Squash & Apple Spice
Ingredients
- 1 bag butternut squash (diced or spiraled)
- 2-3 sweet apples, diced
- 1/2 tsp. pumpkin pie spice
- dash garlic salt
- dash garlic powder
- 1/2 tsp. cinnamon (or to taste)
- olive oil spray
- 1 lemon (freshly squeezed lemon juice for apples and for plating)
- 1 small sweet onion, diced onion
- 3 garlic cloves, diced
- 1 c. mushrooms, sliced
- 1 bag fresh chopped spinach
- 1/2 c. almonds (whole or sliced)
- 1/3 c. dried cranberries
- Gorgonzola or Pecorino cheese (for grating)
Instructions
- Preheat oven to 425 Degrees F
To Roast
- Preheat oven to 425 Degrees F
- Spray (or dust) olive oil on a cookie sheet
- Place butternut squash on the sheet
- Add pumpkin pie spice
- Add diced apple (mixed with a spritz of lemon juice)
- Add garlic salt & powder, cinnamon
- Roast mix in the oven for 30-40 minutes until squash istender but not mushy.
At the Stovetop
- In a skillet on the stovetop over low heat, spray olive oil
- Add in onions and garlic and sauté until translucent
- Add in Mushrooms, spinach, almonds, a dash of garlic powder& salt, and stir.
To Plate
- Put skillet mixture in a large bowl, and add roastedbutternut squash and apple spice.
- Squeeze lemon juice over the top
- Add in dried cranberries
- Grate Gorgonzola or Pecorino cheese on top
- Serve warm
