Simple Apple Crisp

I grew up in an apple orchard, where we not only enjoyed the delicious taste of apples but also reaped the benefits of their nutritional value. Apples, known for their numerous health benefits, were a staple in our kitchen. From apple cake, apple spice muffins, apple tart, apple galette, apple pie, apple blueberry crisp, and the list goes on. My Simple Apple Crisp is a new twist on a traditional favorite. It’s easy to make and simply delicious!

Simple Apple Crisp

Ingredients
  

  • 2 lbs apples, peeled and sliced (sweet variety)
  • 3 T. freshly squeezed lemon juice (half lemon)
  • 1/2 c. golden raisins or dried cranberries
  • 1/2 c. coconut flakes
  • 2 tsp. pumpkin pie spice
  • 1 c. unsweetened apple sauce
  • 1/2 c. candied pecans
  • chocolate morsels (optional)

Instructions
 

Preparation

  • Preheat oven to 350 Degrees F
  • Grease a small pan or Pyrex dish with coconut oil and set aside
  • Place peeled and diced apples in a large bowl
  • Squeeze lemon juice over apples and mix
  • Add in raisins, coconut flakes, pumpkin pie spice, apple sauce, and mix
  • Place candied pecans in a plastic bag and, with a mallet, crush into small pieces.
  • Add crushed pecans to the apple mixture and stir
  • Pour the apple mixture into the greased pan and bake for approximately one hour (the apples will be soft, and the mixture will be bubbly).

Plate

  • Serve Simple Apple Crisp (hot or cold) with a dollop of whipped cream or vanilla bean ice cream. Garnish with chocolate morsels.

Notes

Simple Apple Crisp is also delicious with yogurt for breakfast or a snack.
