Sweet & Spicy Black Bean Tacos
My Sweet & Spicy Black Bean Tacos are a great for an easy and nutritious lunch or dinner! I serve them vegetarian or vegan. However, if you prefer, you can also add in some meat, chicken or fish.
Sweet & Spicy Black Bean Tacos
Ingredients
- 1 can black beans, drained
- 2 sweet potatoes, boiled and cubed
- 1.5 c. pineapple chunks (fresh or if in a can, drained)
- 1/4 c. red onion, diced
- 1 avocado, peeled and cubed
- chili lime pepper (few dashes to taste)
- Chipotle seasoning (few dashes to taste)
- 2 T. freshly squeezed lemon juice
- 4 tortilla shells (soft or crisp)
- 1/4 c. Feta Cheese (Vegan or Regular or other cheese)
- 2 c. shredded lettuce
Instructions
- Mix black beans, potatoes, pineapple, onion, avocado, seasonings to taste, and lemon juice in a large bowl.
- Warm tortilla shells.
To Plate
- Down the center of each tortilla shell, place a generous portion of the mix.
- Add cheese.
- Add shredded lettuce.
Notes
