Tuscan Farro & Green Salad with Citrus Vinaigrette

Ingredients
  

  • 1/2 c. farro, (cooked in 1 1/3 c. water for approx. 10 minutes)
  • 3 c. arugula
  • 1/4 c. fresh basil, chopped
  • 1 sweet apple, sliced or diced
  • 1/2 c. Gorgonzola crumbles
  • 1/2 c. candied pecans, chopped
  • 1/2 tsp. Italian seasoning blend
  • 1/4 tsp. garlic powder
  • garlic salt and pepper (to taste)
Citrus Vinaigrette
  • 1 naval orange, freshly squeezed (approx 2-3 T. of juice)
  • 1 T. lemon infused extra virgin olive oil (or regular extra virgin olive oil)
  • 1 T. honey

Method
 

  1. Add cooked farro into a large bowl.
  2. Add in arugula.
  3. Add in fresh basil.
  4. Add in candied pecans.
  5. Add in sliced or chopped apples.
  6. Add in garlic salt and pepper, garlic powder, and Italian seasoning.
  7. Top with Gorgonzola crumbles.
  8. Drizzle orange juice over the top of the salad.
  9. Add in olive oil.
  10. Drizzle honey over salad and mix well.
  11. Serve immediately!

Notes

This recipe is simply delicious, using a lemon-infused extra-virgin olive oil that you can find at a specialty store or online. Additionally, you may desire to add extra seasonings to taste.
Serve this salad as a meal or as a side with grilled fish, chicken, or beef. This also goes great with my lentil meatball recipe!
