Tuscan Farro & Green Salad with Citrus Vinaigrette
Several weeks ago, I went out to dinner with a group of friends and had a very tasty salad that I decided to recreate at home. I changed the ingredients a bit to make the recipe my own, and the result is just as delicious! You’ll love Tuscan Farro & Greens Salad with Citrus Vinaigrette. Farro is high in protein, so you can serve it as a main or a side, or with your favorite grilled protein.

Ingredients
Method
- Add cooked farro into a large bowl.
- Add in arugula.
- Add in fresh basil.
- Add in candied pecans.
- Add in sliced or chopped apples.
- Add in garlic salt and pepper, garlic powder, and Italian seasoning.
- Top with Gorgonzola crumbles.
- Drizzle orange juice over the top of the salad.
- Add in olive oil.
- Drizzle honey over salad and mix well.
- Serve immediately!
Notes
This recipe is simply delicious, using a lemon-infused extra-virgin olive oil that you can find at a specialty store or online. Additionally, you may desire to add extra seasonings to taste.
Serve this salad as a meal or as a side with grilled fish, chicken, or beef. This also goes great with my lentil meatball recipe!
