- quinoa (cooked to package instructions, ½ c. per person per serving)
- 2 c. butter lettuce (or 1 c. per person)
- red onion, diced
- candied walnuts
- fresh dill sprigs
- fresh strawberries, sliced
- Mandarin orange slices
- 1 T. fresh lemon juice
- 1 T. fresh lime juice
- dash garlic salt
- extra virgin olive oil
- 1 T. honey
- Mix the above ingredients in a large salad bowl.
- Plate ½ c. quinoa.
- Add salad mix on top of quinoa.
- Garnish the salad with extra strawberries, Mandarin orange slices, and dill sprigs.
