Chili Lime Cauliflower Rice
Cook up this simply yummy CHILI LIME CAULIFLOWER RICE in under 30 minutes for dinner! Serve on its own or with a protein of your choice.
Chili Lime Cauliflower Rice
Ingredients
- 1/2 c. red onion, diced
- 2 c. fresh spinach
- 1/2 c. carrots, shredded
- 1/2 c. water
- 1/4 c. walnuts, chopped
- 1/4 c. pistachios
- 1 16oz. cauliflower rice (in a bag or frozen)
- 1/2 c. golden raisins
- 2 T. freshly squeezed lime juice
- Worcestershire sauce, few sprinkles to taste
- soy sauce, few sprinkles to taste (optional)
- 2-3 T. chili lime seasoning blend to taste
- 1 tsp. garlic powder
- 1/4 tsp. garlic salt to taste (optional)
- extra virgin olive oil
Instructions
- At the stovetop, drizzle some olive oil in a skillet.
- Add in red onion and sauté until translucent.
- Add in spinach, carrots, and water. Stir veggies untiltender.
- Add in walnuts and pistachios, stir.
- Add in cauliflower rice, lime juice, and spices and saucesto taste.
Notes
Serve by itself (or with your favorite protein). Refrigerate leftovers for additional meals.
