
Healthy Veggie Salad Bowl
For lunch or dinner, I enjoy eating my vegetables as a side or in my salad. Recently, I dined out with a friend and ordered a lunch bowl that was filled with lots of delicious vegetables alongside organic grains. It got me thinking about creating healthy veggie bowls to have at home. What’s great about a healthy veggie bowl is that you can include whatever veggies you like, whether they be grilled, roasted, or raw, and make the ingredients ahead of time to enjoy for several days. I also enjoy mixing in nuts and grains high in protein, like farro or quinoa. If you’d like, you can include tofu, meat, chicken, or fish in your bowl.

Method
- In individual bowls, put a generous portion of quinoa, beans, greens, mango, and avocado around the sides of the bowl and a dollop of hummus in the middle.
- Season with salt, pepper, and smoked paprika to taste.
- Serve immediately.
